Things to look for when buying a commercial meat slicer?

The most important thing to look for when purchasing a meat slicer is the blade. Most blades are made from stainless steel, but a specific size should be selected according to your restaurant’s needs. 12-inch blades are a good standard size and are the most commonly used blades. 12-14-inch blades are larger and designed for more premium slices. 9-10-inch blades are designed for more lightweight use in smaller kitchens. The power of the motor is also important. Higher horsepower means the machine can maintain more intense usage of the moto without burning out. Another important thing to pay attention to is the carriage size. The standard sizes are 7.5 inches to 12 inches, so you should look for a bigger one if you are going to be slicing more meat.

How is slice thickness set on a commercial meat slicer?

The slice thickness is set using a knob on the front of a commercial slicer. It should be set to 0 when you are not using it. Turn the slice thickness to the desired level and return it to 0 when you are not slicing. Always be precise when setting the slice thickness, as commercial meat slicers usually include micrometric measurements. The thickness should be decided according to the type of meat you cut. For example, bologna for fried sandwiches should be around 1/4″ thick, but cold sandwich meat shouldn’t be more than half that thickness. Make sure the slicer blade is thoroughly cleaned before you start to sharpen it, you can use rubbing alcohol to disinfect it. Find the locking knob of your slicer, unscrew it from the base shaft and insert the stones into the base area of it. Once the sharpening stones are securely on the base, screw the knob back into its place. Put the meat slicer blade on the sharpening stones and turn your slicer on. Turn the machine off after 30 seconds, then repeat 3 times. Once finished, unlock the locking knob and remove the stones. Use rubbing alcohol to clean the blade, and it is ready to be used again.
